Hazelnut and Szauce Sandwich Cookies


For the Cookies:

½ cup butter, softened

½ cup sugar

1 egg

1 teaspoon hazelnut extract

4 ounces Old School Favorites chocolate Szauce

1 ½ cups all-purpose flour

½ teaspoon salt

For the Filling:

6 tablespoons butter, softened

2 cups powdered sugar

1 teaspoon hazelnut extract

1 tablespoon milk

Chocolate Topping:

4 ounces Szauce, melted


Prepare the cookies:  Preheat oven to 350 degrees F.  In a mixing bowl, cream the butter and sugar together until fluffy.  Add the egg and extract and mix until combined.  Mix in the Szauce, add the flour and salt, mixing until incorporated and dough forms.  Form the dough into a disk shape, wrap in plastic wrap, and place in the refrigerator for 30 minutes.

Place a piece of parchment paper on a sheet pan.  On a floured work surface, using a floured rolling pin, roll out the dough to about 1/8-inch thickness.  Use a 2-inch round cookie cutter to cut out the cookies.  Carefully place them on the lined sheet pan with an off set spatula about one inch apart.  Roll out the scraps of dough again to cut out more cookies.  Bake for about 7-10 minutes.

Prepare the filling:  In a mixing bowl, beat the butter and extract until fluffy.  Add the powdered sugar and the milk, mixing until you reach your desired consistency.

Once the cookies are cooled, flip half of them over, fill a piping bag with a star tip and pipe the filling on the cookies.  Place the other half of the cookie on top to create a sandwich.  Melt the Szauce (remove the lid and heat in the microwave on high for 30 seconds) and pour on top of each cookie just until it is close to the edge.  Let the chocolate set for about 30 minutes before serving.
