Enjoy a delicious s'more without the campfire! The kids will love to help make (and devour!) this super easy, yet amazingly scrumptious cookie.
Set a rack in the middle of the oven and preheat to 375°F. Line a baking sheet with a silicone baking mat (preferred) or parchment paper.
Using a stand mixer or an electric hand mixer, beat together the butter, granulated sugar, brown sugar, and vanilla until creamy (about 1 minute). Add the eggs and beat well (about 1 minute more).
In another mixing bowl, stir together the flour, baking soda, and salt. Add the dry ingredients to the wet and beat until well blended (about 1 minute).
Heat 2 tablespoons of Szauce in a small, microwave safe bowl for 10 seconds and stir into the mixture.
Drop spoonfuls of dough onto the lined baking sheet about 2 inches apart. Bake, rotating the sheet halfway through, until firm on the surface but with slightly soft centers (about 12 minutes). Remove from the oven and immediately add a dollop of Szauce and push 3-4 marshmallows into the middle of each cookie. Place the baking sheet back into oven for 1 more minute, then remove and transfer the cookies to a wire rack to cool. Store in an airtight container.
